This high caliber chocolate delight can be made in less than 30 minutes, making it the perfect last minute dessert to pack up for a party or make at home for a stay-in movie night. Ingredients ¼ cup roasted cashews ¼ cup unsweetened dried coconut 2 tablespoons pumpkin seeds ¼ cup freeze dried fruit (raspberries or strawberries recommended) 8 ounces white chocolate 2 tablespoons matcha powder Preparation Line a large baking sheet with parchment paper or a nonstick baking mat; set aside. In a small bowl combine cashews, dried coconut, pumpkin seeds, and freeze dried fruit. Mix to combine. Carefully melt white chocolate in the microwave or over a double boiler, stirring gently with a wooden spoon until smooth. Once chocolate is melted, mix in matcha powder and mix until well combined. Pour chocolate mixture onto the lined baking sheet and smooth out evenly into a rectangular shape—a small metal spatula works well for this. Sprinkle immediately with the nut and coconut mixture and set aside to set for one to two hours on the counter, or 30 minutes in the fridge until chocolate has hardened. Break into pieces and serve. Ingredient Variations and Substitutions For an extra layer of flavor, toast the dried coconut in a dry pan until golden and fragrant. Set aside to cool completely before adding to the other ingredients. You can use any combination of nuts or dried fruit for this recipe—just make sure to keep the portions in the same amounts to keep the calorie counts in range. Cooking and Serving Tips Be careful melting the chocolate as it can easily burn; if using the microwave, heat in small increments and stir in between each session.
