Who doesn't love peanut butter? These peanut butter crispy squares taste like the rice crispy squares that you ate as a kid, but they are prepared with ingredients that are better for your body. When choosing peanut butter for this recipe, check the label for added salt, sugar, and oils. The healthiest peanut butter is made just with peanuts. Combined with honey and whole grain crispy brown rice cereal, this healthy dessert can satisfy your sweet tooth without extra ingredients that you don't need. Ingredients 1/3 cup honey 1/2 cup unsalted creamy peanut butter 1 teaspoon vanilla extract 3 cups crispy brown rice cereal Preparation Line an eight-inch square pan with parchment paper. In a medium saucepan, heat honey to a gentle boil. Boil for one minute, then remove from heat. Stir in peanut butter and vanilla until smooth. Gently fold in rice cereal until completely coated. Press mixture into prepared pan. Let cool until firm. Cut into 12 bars. Ingredient Variations and Substitutions To make these treats vegan, use maple syrup or brown rice syrup in place of honey. Try using almond butter or cashew butter in place of peanut butter. If you can't find peanut butter made only with peanuts, grind your own at the grocery store. Many health food stores provide a station that allows you to do so. Cooking and Serving Tips Quickly add the peanut butter and cereal after the honey boils, as it will harden as it cools. Store in an airtight container on the counter. Rate this Recipe You've already rated this recipe. Thanks for your rating! Was this page helpful? Thanks for your feedback!
