But tuna doesn't have to be reserved for tuna salad or even just for lunch. Canned tuna also makes a great high protein snack that is easy to prepare and even easier to enjoy in these easy hummus tuna cucumber bites. Canned albacore tuna is a great source of heart-healthy omega-3 fatty acids. It's also naturally high in protein and low in sodium (just make sure you check the label to make sure there is no added salt). Hummus adds even more protein, a healthy dose of fiber, and tons of flavor. Just use your favorite flavor of prepared hummus (or make your own) to instantly transform canned tuna into a delicious snack that will keep you full and satisfied. Ingredients 1 can (6 oounce) albacore tuna packed in water 1/4 cup hummus, any flavor 2 cucumbers, sliced into rounds Freshly chopped herbs, for garnish (optional) Preparation Drain tuna. In a small bowl, mix tuna and hummus together. Use a teaspoon to scoop tuna onto cucumber rounds. Sprinkle with freshly chopped herbs (optional). Serve immediately or refrigerate, covered, until ready to serve. Ingredient Variations and Substitutions Spice up these bites with your favorite flavor of hummus, such as roasted garlic and roasted red pepper. Check the labels on your hummus and tuna to make sure they are lower in sodium. Herb suggestions for topping include chives, fresh dill, and parsley. Cooking and Serving Tips If you won't be serving these bites for more than a couple of hours, mix the tuna ahead of time and cover in the refrigerator.
