8 Great Low-Carb Soup Recipes

Soups are a great way to use up leftover meats and vegetables. They can make a nice first course or a main dish. Almost any soup can be made low in carbohydrate by leaving out the pasta, rice, or grains, and adding non-starchy vegetables. In many of these soups, it's the blended vegetables that thicken the soup, so there's no need for flour or other thickeners. Here are some delicious low-carb soup recipes.

 This is a nice smooth soup all on its own, but you can also add ham and/or greens to it. If you add a little less broth it can even be a decent cheese sauce for vegetables.

 Another vegetable-based soup, this one with a hint of heat and a hint of smoke from chipotle chilis or smoked paprika in with the roasted red peppers.  This is another case where blending up something in a jar (in this case, the peppers) makes preparation really easy.

 This vegetable soup has an array of colorful veggies in it and is packed with nutrients. You can add chicken or turkey to this soup for a full meal.

You don't need a bowl to be loaded with starches to make a comforting bowl or cup of soup. Make a batch soon and enjoy it for several days!
