Forget about the preservative-filled boxed versions of macaroni and cheese. This 3-ingredient stove top recipe is less processed and tastier. It's meant to be a side dish, so make this dish a complete meal by stirring in chopped cooked broccoli and cooked shrimp or cooked shredded chicken. Just a bit of cream and cheese for the entire recipe—6 cups worth—provides the flavor and creaminess of the classic dish without overloading it with fat and calories.

There are many varieties of gluten-free pasta on the market, made from various grains. Pasta made from brown rice has just the right flavor when tossed with this easy and cheesy sauce.


  • 12 ounces brown rice pasta (elbow or spiral shape)
  • 1/4 cup heavy cream
  • ½ cup shredded mild cheddar cheese


  1. Cook pasta in salted water according to package directions.

  2. Drain then set aside.

  3. Return pot to stove and add cream; bring to a simmer over medium heat.

  4. Add cheese and pasta back to the pot and stir until pasta is well coated and cheese is completely melted.

  5. Serve immediately.

Ingredient Variations and Substitutions

To make a spicier batch of mac and cheese use Monterey Jack cheese along with a pinch of smoked paprika or cayenne pepper.

Cooking and Serving Tips

Shred your own cheese using a box grater—grating your own is more affordable, plus the cheese will melt better than pre-shredded versions.

Use a spiral or elbow shaped pasta as they will hold on to more of the cheesy sauce. Shop around for a high-quality pasta. Some brands of brown rice pasta can be gummy and flavorless, so find a brand you like. Tinkyada and Trader Joe's are excellent brands.

This recipe is best enjoyed right after preparing but you can store leftovers in the fridge. Microwave to reheat, as the pasta will become slightly hard when chilled.
