Decent gluten-free baked goods are hard to come by since many recipes are complicated and use hard to find ingredients. These brownies are a chocolate lovers dream. They are easy to make and filled with rich cocoa goodness. They're also made to be lower in fat by replacing some of the oil and butter with unsweetened applesauce. Ingredients ½ cup all-purpose gluten-free baking mix, such as King Arthur or Bob's Red Mill ½ cup unsweetened cocoa powder ¼ teaspoon baking powder 1/8 teaspoon baking soda ½ teaspoon kosher salt 4 tablespoons unsalted butter, melted and slightly cooled ½ cup unsweetened applesauce 3/4 cup granulated sugar 2 tablespoons canola oil 2 large eggs ½ cup semi-sweet chocolate chips Preparation Preheat oven to 350F. Spray a 9×9-inch square baking dish with cooking spray and set aside. Combine gluten-free baking mix, cocoa, baking powder, baking soda, and salt in a bowl; whisk well and set aside. Place melted butter in a large bowl and whisk in applesauce, sugar, and oil. Whisk in eggs one at a time. Add cocoa mixture and stir gently with a wooden spoon until just combined. Lastly, mix in the chocolate chips. Transfer mixture to prepared baking dish. Bake for 20 to 25 minutes or until a toothpick comes out clean from the center. Let cool for at least 20 minutes before cutting into small squares. Ingredient Variations and Substitutions Many gluten free baking mixes are made from gluten-free whole grains and protein-rich beans, which means there's more fiber. For a little crunch, add a handful of chopped walnuts to the batter. They'll add just a little bit of good-for-you omega-3 fatty acids. Cooking and Serving Tips Serve these brownies bites in small cupcake wrappers arranged on a large platter. These brownies are a decent size but can be cut into smaller bites, which then have less than 90 calories each.
