Who said cake has to be difficult or unhealthy? This coconut pineapple banana cake is made in only one bowl with simple ingredients so you can easily whip up a healthier dessert without a stand mixer.

The delicious, tropical cake is made with tons of real fruit and less sugar, whole wheat flour, and Greek yogurt, making it a healthier cake. But you won't even notice it's better for you, because it's just as moist and flavorful as any other cake.

Ingredients

  • 2 small to medium bananas (ripe or very ripe)
  • 2 large eggs
  • 1/4 cup unsweetened applesauce
  • 1/4 cup vegetable or canola oil
  • 1 (8-ounce) can crushed pineapple in 100 percent juice
  • 1 teaspoon vanilla extract
  • 1/2 cup unsweetened dried coconut flakes
  • 1 1/2 cups white whole wheat flour
  • 1/2 cup granulated sugar
  • 1/2 teaspoon baking powder
  • 3 ounces 1/3-less-fat cream cheese, softened
  • 1/2 cup nonfat plain Greek yogurt
  • 1/4 cup powdered sugar
  • 1/2 teaspoon vanilla extract

Preparation

  1.  Heat oven to 350F. Line an 8x8 square baking dish with parchment (optional) then spray with cooking spray.
  2. In a large bowl, mash bananas well with a fork. Add eggs, applesauce, and oil. Whisk well to blend. Add pineapple (including juice), vanilla and coconut. Stir to combine.
  3. Add flour, sugar and baking powder to wet ingredients. Gently fold in with a spatula until combined. Pour into prepared baking dish.
  1. Bake 30-40 minutes or until a toothpick inserted into the center comes out clean. Remove from oven and cool before frosting.
  2. To make the frosting, whisk all frosting ingredients together until smooth.
  3. Frost completely cooled cake and cut into squares.

Ingredient Variations and Substitutions

You can replace all of the oil with applesauce to reduce fat if you wish.

Feel free to leave out the coconut if you aren't a fan. This cake will still be just as delicious without it.

Cooking and Serving Tips

Completely cool cake before frosting.

Recipe can be doubled for 9x13 cake.

Store leftover cake in the refrigerator, covered.
