This coconut macaroons recipe only requires five ingredients so you can whip up a batch quickly and satisfy your sweet tooth with a healthier treat. While most baked desserts are made with sodium-packed butter, salt, and baking soda (or baking powder), these cookies contain none of those ingredients. They taste indulgent and provide fewer calories than many popular cookies. Ingredients 2 large egg whites 1/4 cup granulated sugar 1/2 teaspoon vanilla extract 2 cups shredded coconut 1/4 cup dark chocolate chips Preparation Heat oven to 350F. Line a baking sheet with parchment or a silicone baking mat. Whisk egg whites, sugar, and vanilla until frothy. Stir in coconut. Scoop mixture into 1-inch balls and place on lined cookie sheet. Bake 15 minutes, or until macaroons are lightly golden. Remove from oven and let cool. In a small microwave-safe dish, melt chocolate chips in 30-second intervals in the microwave, stirring well until smooth. Dip bottoms of macaroons in melted chocolate and place on parchment or a silicone baking mat to dry until chocolate is hardened. Ingredient Variations and Substitutions Use chopped dark chocolate in place of the chocolate chips for a more indulgent taste.
