3 Calorie-Slashed Recipes for Your Next Summer BBQ

When the weather is warm, the grill is usually hot. Sadly, starchy side dishes, creamy slaws, and decadent desserts are frequently higher in calories than you'd like them to be. I’m Hungry Girl Lisa Lillien, and I have three recipes that you and your party pals will go nuts for! No one will ever know they're low in calories, and you'll survive your BBQ without breaking your calorie bank.


Perfect Potato Salad

1/10th of recipe (about 3/4 cup): 118 calories, 5g total fat (0.5g sat fat), 411mg sodium, 13g carbs, 2.5g fiber, 4.5g sugars, 5g protein

Everyone loves potato salad, but a typical serving of the average spud salad has around 300 calories and 20 grams of fat! Be a backyard hero by whipping up this satisfying swap. Cauliflower is my secret ingredient.

1. Peel 10 ounces (about 2 small) white potatoes, cut into 1/2-inch pieces, and place in a large microwave-safe bowl. Add 6 cups of chopped cauliflower and 1/2 cup water. Cover and microwave for 6 minutes. Stir, re-cover, and microwave for 4 minutes, or until tender. Once cool enough to handle, drain excess water.

2. Transfer 2 cups of the cooked cauliflower only (no potato) to a blender or food processor. Add 3/4 cup light mayonnaise, 1/2 cup fat-free plain Greek yogurt, 2 teaspoons Dijon mustard, 1/2 teaspoon garlic powder, 1/2 teaspoon onion powder, 1/2 teaspoon salt, and 1 tablespoon water. Blend/process until smooth and uniform.

3. Add mixture to the large bowl and stir to coat. Add the following: 6 chopped hard-boiled egg whites, 1 cup chopped onion, 1/2 cup chopped celery, 2 tablespoons seasoned rice vinegar, 2 tablespoons chopped dill, and 2 tablespoons chopped parsley. Mix well.

4. Refrigerate until chilled, at least 1 hour. If you like, top with parsley.


Scoopable Chinese Chicken Salad

A refreshing salad is just what an outdoor summer cookout needs. Everyone loves a good Chinese chicken salad, and this one will not disappoint! It's a creative twist on a standard salad.

1. In a large bowl, combine a 16-ounce bag of broccoli cole slaw, an 8-ounce can of drained & sliced water chestnuts, 1 cup drained and chopped mandarin orange segments packed in juice (or light syrup), 1 cup chopped scallions, and 12 ounces cooked and chopped skinless lean chicken breast. Mix well.

2. Top with 3/4 cup low-fat sesame ginger dressing (like the kind by Newman’s Own). That’s it! Time to slap on some sunscreen and hit the party.


Red, White, and Blueberry Stuffed Strawberries

1/5th of recipe (2 stuffed strawberries): 29 calories, 0.5g total fat (0.5g sat fat), 17mg sodium, 5g carbs, 1g fiber, 3g sugars, 1.5g protein

These are the cutest! Patriotic, pretty, and perfectly poppable! And since they're so low in calories, you can eat a bunch. You may want to double or triple this recipe, because it's that good.

1. Slice the stem ends off 10 large strawberries, about 1/2 inch below the stem, revealing an opening in each berry. Use a narrow spoon to remove about half of the flesh inside each berry, allowing room for filling.

2. Cut a thin slice off the bottom of each strawberry, so the berries sit flat.

3. In a small bowl, combine 1/4 cup light/low-fat ricotta cheese, 1 packet no-calorie sweetener (like Truvia), and 1/8 teaspoon vanilla extract. Mix until uniform.

4. Spoon ricotta mixture into a bottom corner of a plastic bag; snip off the tip of that corner to create a small hole, and squeeze the mixture into the strawberries.

5. Press 3 blueberries into the filling of each strawberry. Bring to your BBQ, and bask in the many praises. Enjoy with a fun summer cocktail.
